The Cholesterol Factor

For all of you concerned about the affects ghee may have on your cholesterol, there are some recent studies to show that eating ghee, and any high quality saturated fats for that matter, is not linked to arteriosclerosis (clogged arteries) or high cholesterol.  While the evidence makes perfect sense to some who have been on the quality “fats”  wagon for awhile, convincing others of you, when fats have been so ‘demonized’ in our society, might be tougher.  Ghee is considered a high-quality saturated fat though is non-dairy (because all the lactose has been removed).   I’m adding in a link here to an article written by Mary Enig and Sally Fallon called “The Skinny on Fats” that really is all inclusive and will answer many of your questions on how fats can be good for you and NOT make you fat.  Check it out: Especially read the” Lipid Hypothesis” section and the “Evidence Supporting the Lipid Hypothesis”.
