Ingredients
Instructions
  1. Slice tomato, onion and arugula and place it on a plate
  2. Sprinkle with salt and pepper
  3. Drizzle balsamic vinegar onto tomatoes, onions, and arugula and set a side to marinate.
  4. Generously spread ghee on one side of each slice of sourdough bread
  5. Heat frying pan to a medium/high heat
  6. Place sourdough bread in pan, ghee side down
  7. Place two slices of mozzarella cheese on two of the slices of bread
  8. Place 1/4 c. Feta Cheese on each remaining slice of bread
  9. Cover all slices of bread with finely chopped kalamata olives
  10. Divide evenly and add marinated tomatoes, onions, and arugula
  11. Cook until the bread is golden brown
  12. Close sandwich and remove from heat
  13. Slice sandwich in half and enjoy!
