Ingredients
Instructions
  1. Heat ghee in large pan on a med/high heat until it simmers
  2. Add prawns and mushrooms and saute for approx. 2-3 minutes ( prawns will be translucent but will only be about half way cooked at this point)
  3. Add lemon zest, spinach, and pinch of salt and pepper and saute for another minute
  4. Add chardonnay and lemon juice to deglaze the pan
  5. Let the alcohol cook out for 2 minutes
  6. Add cooked fettuccine and toss until pasta is warm
  7. Plate and Garnish with drizzle of ghee, chopped green onions and Romano cheese
